Cassoulet – pork and duck are slow-braised with white beans, tomatoes and homemade sausage to create a rich and satisfying casserole. Legend has it that when Castelnaudary in southern France was besieged by the English during the Hundred Years War, the citizens pooled their last food resources to give their soldiers strength before they tried to repel the invaders. The French lost, but a classic had been created.
Gateau Reine de Saba – the Queen of Sheba cake is a moist, slightly dense, ultra-rich, and deeply chocolaty cake made with ground almonds. Beaten egg whites make the cake rise in the oven, but it is then allowed to collapse while cooling. Think of it as a fallen chocolate souffle.
