Beet, scallion, and chicken soup
Ingredients:
2 medium beets, peeled and cubed
1 boneless, skinless chicken breast, cut into small pieces
1 small onion, chopped
2 cloves of garlic, minced
4 cups low-sodium chicken broth
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
Freshly chopped scallions, for garnish
Instructions:
In a large pot over medium-high heat, heat a little olive oil. Add the onion and garlic and cook until tender and fragrant.
Add the chicken pieces to the pot and cook until browned on all sides.
Add the beet cubes, cumin, and smoked paprika. Stir to combine the flavors.
Pour the chicken broth into the pot and bring the mixture to a boil. Reduce the heat and let the soup simmer for approximately 20-25 minutes, or until the beets are tender and the chicken is well-cooked.
Remove the pot from the heat and let the soup cool slightly. Then, use a blender or an immersion blender to blend the soup until smooth and creamy.
Reheat the soup if necessary and season with salt and pepper to taste.
Serve the hot soup in individual bowls and garnish with freshly chopped scallions.
