Canned beans can be easier to digest because they are cooked under pressure and are thoroughly cooked. At the altitude of Cuenca, beans are hard to cook thoroughly. If your beans are not nice and soft, they aren't cooked well enough. An instant pot or other pressure cooker makes thorough cooking possible and easy.
Start eating well cooked beans a few tablespoons on day 1, a few more on day 2, a few more on day 3, a half cup on day 4, etc. If you have too much gas on any of these days, step back a tablespoon or two and build up to eating them more slowly.Read more00
