Raw garlic has interesting benefits for cardiovascular health since it reduces blood pressure, cholesterol and platelet aggregation, lows fasting glucose and bumps up the immune system. These benefits are due to “Allicin”, a powerful antioxidant found in raw garlic, which is deactivated when it is cooked and activated when it is crushed, which is what gives it its characteristic smell. Caution should be exercised if taking anticoagulants, as garlic potentiates the effects of these medications.
