You can purchase our famous ribs, fully cooked, in a convenient plastic pouch that you can drop into a pot of 150F/70C water to fully reheat the ribs without fear of having overcooked ribs. There is even an easy open notch on every bag so that you can simply tear the bag open when you are ready to serve.
We want you to understand the process we use and why.
We fully cook the ribs exactly the same as those that we are serving fresh. Then we take the ribs we are going to package, cool them and refrigerate overnight. Then we package the ribs as either half racks or full racks. We do not fully separate the ribs, because we want to retain as much of the natural moisture as possible.
Ribs from our current supplier run about 1 ½ pounds per rack after they are fully cooked (there is about 33% shrinkage from raw weight to cooked weight). So, we are packaging ¾ pound and 1 ½ pound packages, more or less. We weigh and label each package, together with the packaging date.
The reason we chill the ribs overnight is to retain the natural moisture. If we vacuum seal the ribs while they are still warm, then the vacuum process squeezes much of the natural moisture out of the meat. If we first chill the meat, the juice redistributes, then congeals while it is cold, and will stay in the meat.
Many other people will package while warm, but they will add sauce to the packages to cover up the loss of the natural juices and their inferior processes. We refuse to cover up our ribs in sauce, so we choose the slower and more expensive process to ensure quality.
So, understand that if you want to have the vacuum packaged ribs for weekday enjoyment (or maybe for your next party), then we need a little notice to make sure that we have packages available for you. We will try to plan to have a small inventory at all times, but to be certain, order in advance. It is a two-day process for us to vacuum package the ribs, and we cannot simply take hot ribs and package them up without a significant degrading of quality.
