Another big weekend at Pájaro y Bestia. Sold out of everything on Saturday and closed early. Not even a weekday lunch left for me.
I met at least two dozen virgins over the weekend – first time customers at P and B. All had very kind things to say about the food. I want to thank all of our new friends for taking the leap and discovering what ‘Real Deal’ BBQ is all about. And I appreciate your comments. Tell your friends.
The Tennessee Sweetheart was a runaway hit. A pork loin that is butterflied, then rubbed with Tennessee whiskey, sugar, mustard, and BBQ rub; then rolled up, wrapped in bacon, slow smoked while basting with a butter, mustard, whiskey and sugar glaze. We sold whole pork loins in less than 2 hours on both Friday and Saturday.
At the request of my kitchen staff, we are going to have a repeat performance of the Tennessee Sweetheart this week. My staff gets free food at work, and they are upset that they did not get a chance to try this dish.
As for the rest of you, we suggest that you reserve your portion in advance if you wish to try this new culinary creation.
