Having lived in the largest Arab-American community in the US for many years, (the Detroit-Ann Arbor area) and having Palestinian friends who are fabulous cooks, I can vouch for Ali’s food as the most authentic Middle Eastern food I’ve eaten in Cuenca. Although I can’t say I’ve tried every pita bread made here, his is the only pita that I consider the real deal – thin, large, air-filled pockets. This week I tried his Sambusek, little spinach turnovers seasoned with sumac (Middle Eastern herb with a unique flavor) and they are outstanding. I plan to always have some in my freezer, as you can eat them as a snack, an appetizer or a side dish. If I didn’t make my own hummus and tabbouli, I would be eating his. If you love Middle Eastern food, treat yourself to his offerings, you won’t regret it.
