Join us for a New Year’s Eve extravaganza, and a great way to escape from the mayhem of New Year’s Eve in the city. Our package includes a private shuttle to our eco resort 30 minutes outside of Cuenca. You will have some time in the afternoon to relax or explore our amazing property. Our wine tasting dinner will begin at 5pm with 4 courses and 8 wines. The first course is an appetizer of eggplant, roasted red peppers, and cheese paired with a vertical tasting of Carta Vieja Reserva Single Vineyard Syrah, one from the 2011 vintage and the other a more recent vintage. Our second course is a caprese salad featuring our homegrown heirloom tomatoes, olive oil, balsamic vinegar, homegrown basil and mozzarella cheese. This course is paired with a Carmenere from Chile and a Malbec from Argentina. For our main course we feature the chef’s signature dish Chicken Marsala, chicken breast with a sauce made from mushrooms, butter and Marsala wine. This course is paired with two excellent examples of Cabernet Sauvignon, from the 2015 vintage. Lastly we will have two desserts, each paired with its own wine. First our elegant chocolate mousse paired with a special cabernet/carmenere blend; the second our Italian cheesecake paired with a Late Harvest wine made from Sauvignon Blanc, Viognier, Gewurztraminer and Riesling, vintage 2013.
This elegant feast will be served fireside in our main lodge, after which you will retire to one of our two pine log cabins, where you can enjoy your own private fireplace. Breakfast will be served in the main lodge at the time your group decides to eat. Each cabin sleeps 4, ideal for two couples, and we also have two private rooms in the main lodge (rooms are sold out).
