I think they pick it that morning or the night before – the cilantro with its roots that I have learned to bash with my special Ecuadorian mortar and pestle… the broccoli and cauliflower still wrapped in their crisp superfood leaves, the basil still heavily perfumed, eggs that are – in my opinion – the best in Cuenca, and lots of things not listed but there if you ask.
I like to recall that besides the high quality of everything they sell, the context is this organic agroecological tourism cooperative up there in the rural area north of Azogues, and they welcome visitors.
Cuenca has a lot of joys and Kinti Wasi is one of them.
