We invite you to experience La Chichería, a gastronomic project with a firm stance on food sovereignty and agroecology, led by the visionary Tatiana Rodríguez and Gustavo Romero.

La Chichería’s unique culinary proposal aims to reclaim chicha and mountain cuisine as integral parts of Ecuadorian identity. Every dish served at La Chichería is crafted with ingredients sourced from the Red Agroecológica del Austro. This network includes over 24 farming organizations across Azuay, Morona Santiago, and Cañar, primarily led by women farmers, supporting at least 400 families.
Our dedication to preserving traditional flavors and sustainable practices has garnered recognition. La Chichería received an honorable mention in the “Rescatando Sabores” program by Diners Club, where 10 innovative gastronomic ventures showcased their concepts over a three-month development period. The program was overseen by renowned gastronomic journalist Ignacio Medina and aired on Teleamazonas.
Additionally, La Chichería was featured in the documentary series “Andes Mágicos,” highlighting ancestral culinary practices from the region.
Tatiana Rodríguez’s work is deeply intertwined with researching ancestral culinary technologies, such as the preparation of chicha and its significance in Andean Ecuadorian culture.
Join us in the traditional San Roque neighborhood, at Plaza del Carbón (Av. 12 de Abril and Calle del Farol), a historic space that once served as a hub for product exchange. La Chichería is open from Wednesday to Sunday, 12:30 PM to 10 PM.
