For nature lovers and foodies an exciting opportunity awaits. We open our doors to the public Saturday, October 19. Our restaurant, Bistro at the Oasis, will be open each weekend, Saturday and Sunday, from noon to 7 PM. And for nature lovers our Eco Resort offers spectacular mountain views and a full kilometer of cascading quebrada (mountain stream). Come out for a morning or hiking, bird watching, or just relaxing alongside the cascades, and then join us for a wonderful luncheon. We feature a bistro style menu with classic cuisine from France and Italy.
Our menu includes:
French Carrot Soup
Caesar style salad
Tramazzino Sandwich with your choice of fillings: egg salad with asparagus, tuna salad with black olives and capers, smoked salmon and cream cheese with arugula, and prosciutto ham and provolone cheese with Dijon mustard. (or you can try our special, 1/4 each filling)
Croque Monsieur: the French classic with ham, gruyere cheese, Dijon, grilled and then baked with a Bechamel sauce.
Pizza by the slice or whole pie with choice of toppings: roasted red pepper, roasted onion, roasted garlic, mushroom, cheese, pepperoni or salami.

In addition we offer a special retreat we call The Oasis Experience where you can rent one or both of our newly built rustic log cabins for one or two nights, enjoy the beauty and tranquility of our Eco Resort, and be treated to a 4-course dinner for your private party of 4-8 guests. And the following morning you will enjoy a full breakfast, served in your cabin or in main lodge. If you stay for two nights the package includes a luncheon on the second day. Available Sunday-Thursday nights you will enjoy the resort and restaurant as a private party. Write to us for details. We are located 30 minutes by car or taxi from Cuenca, and 3 bus lines would bring you from the main terminal in Cuenca right to our door.
