As we enter a new year and start to focus on what we’d like to create for ourselves it’s a great time to re-center within ourselves and to become more grounded in embodied presence. This allows us to be more fully available to new possibilities and opportunities as well as see ways we may be limiting ourselves.

Embodied presence is the experience of being fully here with a quiet mind, a receptive non-reactive heart, and grounded in our physical sensation, which is the foundation from which we access all the intelligence and wisdom available to us. While our habitual ways of thinking, being, and doing are comfortable and can serve us well, they can also limit us, and we’re usually the last ones to see it. Increased presence allows you to become more attuned to inner and outer reality, to make new and creative choices rather than habitual ones, and to be more empowered and effective in whatever you’re doing. With Presence, we can bring more to the world, to our work, and to our relationships.

Traveling Workshop – Making queso at hacienda in Soldados

Join local tour guide, Maria Dolores Saldaño of Lola tours for an incredible day in the picturesque mountains of Soldados in the outskirts of Cuenca. In this traveling workshop, you will spend the day with Maria’s dad, Don Fabián, and he will teach you how to make queso fresco with milk from his own dairy cows!

He will also take you for a refreshing walk around his 500-hectare hacienda as well as take you to the dairy farm where you’ll get to meet the cows. You can even milk one if you’d like! You will also enjoy a home-cooked meal for lunch with a view of the property. This is a fun, peaceful, and cultural experience. It’s a great way to unwind after all the holiday activities!

Basket Weaving Workshop in El Campo

Join local tour guide, Maria Dolores Saldaño, for a cultural traveling workshop to the outskirts of Cuenca where you will learn the basics of basket weaving from a local woman who comes from a family of basket weavers.

Bertha Morocho dedicates her time to working in el campo (the countryside) and making baskets using the weaving technique that has been passed down for generations in her family. She will do a weaving demonstration then it’s your turn! You will also get to stroll around the grounds of the property, taking in the serenity and fresh air of the countryside, as well as enjoy a home-cooked meal for lunch carefully prepared by Maria’s sister who is studying to be a chef.

This truly is a cultural moment and very rewarding! There are only a couple spots left, so please make your reservation right away.

Community Choir 2023

Dear singers,
I am pleased to announce that we have a director for our community choir, and rehearsals begin Mon. Jan. 23, 6:30-8:30 PM., at the International Christian Community (ICC) church, in preparation for our concert at la Catedral Vieja in April, after Holy Week.

Many of you are already familiar with our director, Jorge Regalado, whose dossier runs up and down the musical scale. When we told Jorge we wanted our choir to be fun, he asked if we also wanted to learn to sing well. We said, “Of course!”

David Zoernig continues as our accompanist, and we are as happy about that as we were when we learned that Ariel’s voice had been restored in The Little Mermaid. Fortunate was she, and so are we.

Rita O’ Donald is taking registrations and is available to answer your questions.

New Year’s Eve Candlelight Dinner: Open for Cocktails 5 PM, dinner 7 PM. We will watch the countdown from England and “Big Ben”, and follow with dinner with the evening ending 9 or 9:30 for those with ‘fireworks’ parties to rush to.

A Blue Christmas, a time when we can, with others, acknowledge the “blue” feelings we have at Christmas time, the reasons for them, and offer them to God. This time has been called the “long dark night of the soul” and “the winter of our discontent” in which memories of past experiences and the pain of present experiences can become overwhelming. For some, Christmas Day is the most difficult. For others, it may be Christmas Eve, or New Years’ Eve, or the beginning of another lonely New Year. In this service, we’ll have some singing appropriate to the season, recognizing that this is not a season of joy for everyone. We will invite you to reflect on the pain, the loneliness, and the sadness you may feel and offer it to God for healing and transformation. We pray that you will find hope and comfort in knowing that you are not alone. Always remember that God knows your pain and loves you unconditionally.

A Christmas to remember, farm-to-table dinner menu

Gran Roca announces the menu for our “A Christmas to Remember Farm-to-Table Dinner” using our sustainably grown and raised meats and vegetables to produce fresh, healthy and delicious dishes to please a wide variety of tastes and diets. All of our dishes are gluten free and produced in our commercial kitchen that is also gluten free. We cook using a minimum amount of oil (and only extra virgin olive oil). We are also careful with our use of sugar and salt.

Our Menu for Christmas Dinner:

~ Sustainably raised on pasture, smoked turkeys, using our professional commercial smoker and our special technique on how we cook them. Cooking a turkey in the traditional way often leads to either overcooked or under-cooked white or dark meat. Our cooking method gets both white and dark meat perfectly cooked, juicy and delicious.

~ Sustainably raised on pasture, smoked pork, using our professional commercial smoker, and served with a tamarind-pineapple sauce.

Double D’s: Christmas order deadline is today at 5 PM

We’re so glad to see gatherings and celebrations returning after two holiday seasons stifled by Covid. We appreciate your trust and confidence in making our food and baked delights part of your celebrations.

Demand for our holiday desserts and sweets has been off the charts so between that and several catering events, our casserole/soup/salad menus are on hold until after the new year. We may do a small bites/finger foods menu for New Year’s Eve like we did last year. There will be more to come on that.

The deadline to order sweets and desserts for Christmas is 5 PM on Friday. Please know some delivery dates are already completely booked. We’ll do our best to accommodate your preferred delivery date.
