Chicken soup and the two-year old lemon

This Saturday, May 14th, I will be serving my homemade chicken lemon soup. A traditional dish in Cambodia. This soup is a delicate balance of traditional homemade chicken soup but with a twist; lemon. Not just any lemon, in order to get the perfect lemon flavor without bitterness the lemons must go through a process cleaning, sun, sea salt and purified water. Only after being stored for six months are the lemons ready for my soup. One year is better and two years, Wow!

I have enough of my two-year old lemons to make 18-20 bowls of soup. My next batch of one-year old lemons won’t be ready until the middle of June. So, join me in a traditional Cambodian meal. A generous amount of chicken in a broth you will never forget and a mixed drink on the house as we celebrate “Cambodian chicken soup & the two year old lemon”

Taoism – Not a Religion but a Way of Life, workshop

Taoism Workshop – Fundamental concepts and relationship with Qigong

“The wise man is one who knows what he does not know.” ~Lao Tzu, Tao Te Ching.

During this workshop you will be introduced to the basic concepts and philosophy of Taoism.

We will discuss and explore the nature of Taoism, its influence in society, and relevance to Qigong & Traditional Chinese Medicine.

The Tao is unknowable and unspeakable, yet we will do our best to introduce its history and practical applications.

This workshop is suitable for both people who have no background in Taoism and for those who have studied it and want a new perspective.

LaoTzu wrote: “The Tao that can be expressed is not the Eternal Tao.”
Yet, he wrote about it and provided human kind with immortal wisdom.

Included with the workshop you will receive printed material with further information on the topic of Taoism and its propagations through history.

Road trip to Oña with idiomART – May 22

We are so excited to announce our next idiomART road trip. This time we will be traveling to Oña, which is in the southernmost part of the province of Azuay. Oña is the very first Spanish settlement in Ecuador and has a very rich history.

We will start the day with a guided tour of the barrio San Francisco, which is the historic part of the village with various adobe buildings, many of which with walls painted with paint made from soil. The tour will be guided by cultural heritage experts Lourdes Abad and Daniela Samaniego who will discuss the history as well as the traditional architecture and building techniques. We will also visit the historic La Bella de Paris, which is a home in the barrio that has been renovated and turned into a museum. Later, we will eat a traditional meal in a renovated adobe home in town. Then we will finish off the day by learning how to make paint out of earth and we’ll have the chance to actually paint a wall in Oña!

This is a day trip and we will be home in the late evening. The cost includes transportation, food and guided tours. Also, a portion of the money will go to the La Comuna Marcos Perez Nature Reserve, which is a group of people from Oña who own over 7,000 hectares of forest, which they are preserving. There will be some walking in the village through the barrio San Francisco, which is on cobblestone streets.

The trip is being co-organized with idiomART, local Co-op Centerline and idiomART’s CCC Spanish! Centerline works directly with the Nature Preserve and is dedicated to designing and implementing eco-tecnias, which are holistic and sustainable solutions that meet the needs of nature and humans. CCC Spanish is idiomART’s language program led by Martha and Fausto.

The tour will be held in Spanish, however, there are bilingual people on the tour who can help clear up confusions if necessary.

This trip is full of historic information, beautiful scenery and interesting sites to see. Learn more about this incredible country we’ve decided to call home or visit. We have limited space, so please email us right away to reserve your spot.

Reviews:

“No one around plays like pianist Jim Gala. At first, I couldn’t figure out what he was doing musically. I couldn’t analyze the music. It was just too beautiful and beyond my scope. All I could do was let the music wash over me and accept its effect. Jim is one of my musical idols. He is a real soul man. No one plays like him. His musical philosophy, sensibility, and taste are impeccable. He changed my life with his music. I actually quote him often and wrote about him in my book.”
—J. Riley Cain, Jazz historian, author, pianist

“Cuenca is blessed to have such an artist in Jim Gala. I’ve played with some of the greats on both sides of the Atlantic, yet I have never heard such a transformative, unique jazz pianist as Jim Gala. Simply put, he’s a true musical genius.”
—Bill Scott, Broadway Singer, Composer & Arranger

“The music was unforgettable. We were honored with the exquisite playing of the quartet—especially Jim Gala on piano. Beautiful venue, friendly staff, and lovely but affordable drinks and menu; I highly recommend it.” —Caroline Ackroyd

“A master of beauty.” —Francis Pullara, classical pianist

The 5 Elements Workshop – Nature Within & Without

Connect deeper with the 5 elements!

“As a microcosm, human beings embody all the phases within themselves. Within each thing is contained all things. In the seed is the tree; in the tree is the forest …”*
The answers to your health, well-being and strength might be right before your eyes!
Learn about yourself, your emotions and what makes you who you are through
nature.

Understand what creates harmony in nature, and apply it to yourself to create harmony and well-being within!

Just as many other ancient teachings, the Ancient Chinese Masters understood that to grasp the nature of human, we must look at nature itself. They categorized the patterns they saw in nature and all things, as Earth, Metal, Water, Wood & Fire – The 5 Elements!

In this workshop, you will learn the basics of the 5 Elements theory, which is a major part of the foundation for Traditional Chinese Medicine. You will learn about the elements, and their associated organ systems, emotions, spirits, colors and much more.

You will also learn some practical tools to bring with you home, and how QiGong uses the theory of the 5 elements for a more powerful and individualized healing.

It is a three-day workshop, we highly recommend that you go to all three of them, but if you’d like you can go to just the day that suits you.

Get a 15% discount when you book all three days.

Return of Maestro Arindia to Oro Verde

I was in Oro Verde–Ordones Lasso coffee shop last Saturday evening when I heard this beautiful music coming from the baby grand piano in the lobby. I instantly recalled the pre-Covid memory rich, calming classics, pop, post-WWII–you name it–performed with such indescribable style and grace by Maestro Arindia. I immediately left my drink and stepped up to welcome the Maestro’s return as we had come to deeply appreciate this pre-Covid.

The priceless performance is free, but after our fond greetings I suggested the Maestro find a container from the cocktail bar to hold contributions for those who would like to express their great enjoyment also in giving back a little. He complied and I deposited an amount to further express my excitement and appreciation for this privilege. I so hoped the Maestro would stay a while and return as we were the sole attendees at that first unadvertised moment since Covid shut down this priceless, rare event English and Spanish speaking alike greatly enjoy, before word got out of his return. Front desk assured us he has returned for regular performances every Saturday evening 7-9.

Pre-Covid a friend and I previously attended without failure every Saturday evening for refreshments and this great and enjoyable informal privilege—who would expect to find such musical selections played so incredibly by a Maestro in EC of all places?
Last Saturday evening I expressed my great excitement and enthusiasm to the Maestro and management (for this regular performance at no charge to all within walking distance for many local residents, by taxi, or by car for others who will find parking in the free, roomy parking lot below and the east side of the hotel), that is returning after too long, I have already invited friends to join me next Saturday evening in the coffee shop or on relaxing, comfortable sofas in the lobby. What a privilege and treat.

Saturday evenings from 7-9, No charge, Oro Verde Hotel, Ave. Ordones Lasso, Cuenca.

Organic bone broth delivery

Mother and Son Family Kitchen has been delivering soups and meals in Cuenca for almost 6 years. It’s no secret that we use broth on almost all of our dishes.

When it comes to making soups, the stock that you use is the most important ingredient. Poorly flavored stock will ruin the entire pot of soup. For soups, homemade broth is always the best choice.

We slow-cooked our broth in small batches using only organic veggies and bones from grass-fed beef, organic feed pork and free-range chicken. Drinking bone broth has good health benefit.

Available in beef, chicken and pork for $5 per pint.

We also make turkey broth; $6 a pint with minimum of 6 pints per order.

Tuesday to Sunday, Jazz Society Cafe
Los Cedros y Los Claveles (one block North of Ordonez Lasso)

The 5 Elements Workshop – nature within & without

It is a three day workshop, we highly recommend that you go to all three of them, but if you’d like you can go to just the day that suits you.

Get a 15% discount when you book all three days.

Learn about Taoism! – Workshop
