One of my favorite eating experiences is enjoying bagel, lox (smoked salmon), and cream cheese with tomato, onion and capers. Depending on how the salmon is cured and where it comes from, the flavors can be very different. During my first trip to Peter’s Deli, I bought a package of smoked salmon (lox) and was transported! It is the best I’ve ever tasted – either here in Cuenca or in the United States. I was surprised and delighted to find this culinary treasure just minutes from my home.
