You have been asking for brisket for quite some time. I just could never find a brisket that was worthy of putting our name on. This week, go big or go home. I am going to step out on a limb and try a brisket from a new meat provider.
So, on Friday if I look like a father with a recent newborn (being someone that has had no sleep), then it is because I will be closely monitoring the process all night on Thursday while we birth this brisket. If the brisket fails, it will be because of the failure of the meat, not from failure of the process.
We urge you to reserve your food early if you wish to be part of this special event. This past weekend, we had food all day on Friday, but on Saturday we sold out of ribs in 1½ hours and had to cook 2 batches of pork loin and 3 batches of chicken.
