JJ was literally thrown out of the gate of the home that he probably had grown up in. The old lady lives in a shack of a house and said she didn’t want him. He ran across the street stopping 5 feet from the sidewalk, and just stood there. I chased him back to the other sidewalk where I had been walking, put the yoga strap on for a lead (I’d just bought). He ran to the gate of the only home he knew and his mother dog was lying next to the gate looking at him with her under the 4” space between the solid bottom of the gate and the dirt driveway and she was crying. He was trying to get through the gate and he too was crying!

I was finally able to pull him out and get him to come with me. I tried to get a taxi, but the empty ones just passed us by. Finally, one stopped and told me he would not take a dog. TI walked him back to where I could sit down and figure out what to do next. He continued to cry on and off and trembled often. We went to vet Dr. Gallardo (a prince among vets). JJ was full of fleas and some ticks too.

Real deal BBQ at Pájaro y Bestia

We wish to take a moment to explain our cooking process on our now famous pork ribs. Our pork ribs are cooked from beginning to end in a carbon fired smoker. The process takes approximately 5 hours – 1 hour to prep and 4 hours to cook. We do not boil our ribs, we do not sous vide the ribs, we do not cook them in a conventional oven, and we do not put our ribs on a smoker for a brief amount of time and then finish them in another piece of equipment. We are real deal BBQ. If we cook meat in anything other than our three smokers, we tell you. Even when we braise beef, we generally put the braising pot into a smoker to trap additional flavor.

We price our ribs by the pound, but we sell them in quarter pound increments. One quarter pound of ribs will be two small or one large rib bone. So, for only $2.75, you can come try one rib and discover that we are in fact the real deal. But to borrow someone else’s ad campaign, I bet you can’t eat just one.

Greetings — we reserved our pickup from Guayaquil from Emilio Morocho (Cuenca Car Share) and he greeted us with a welcome sign, a smile, and a hug — a friendship was born. Emilio is one-of-a-kind, a true “Emilio of all trades.” He has been so helpful in our first couple of weeks here in Cuenca.

Prices are moderate ($$) and main dishes are typical, not above $8.75. We were not very hungry: we shared a starter and dessert, had a main dish each (2) and a glass of fermented Chicha each ($3). The bill came to $31.

The service by Gustavo is attentive and he skillfully navigates you through the menu. The interior is comfortable and simple with a an attractive black/white internal mural.

Course of handmade organic soaps

Would you like to learn how to make your own soaps? Either for a gift or for your personal use, or who knows and starting a small business.
Come alone or with your friends to spend a great morning, in the middle of nature and with a relaxing environment as it is in the parador turistico el chorro in Giron (waterfalls) 45 minutes distance of Cuenca. Would you like to do it?

in the course you will learn to make soaps with flours such as quinoa, oats and other ingredients such as coffee, curcuma, chia, chocolate, etc. A written guide will be given so you can do it at home. We will make three soaps together with the ingredients you choose and at the end of the course I will provide you with information on the place where you can buy all the materials to make your own soaps (in Cuenca if there is).

The cost of the course is only $20. You can pay it either by transference or in cash at the time of the course. To ensure your place you must pay half.

Vilcabamba Wellness Festival – advance ticket sales

The 2nd Vilcabamba Wellness Festival is only 2 weeks away (27 – 29 January). We hope you have blocked your calendar for this impressive event; gaining national recognition. What the festival needs now is advance ticket sales, a major sponsor for transporting our native cousins dropped out last week, and we need to raise funds pronto. This is where you come in!
