Gran Roca announces the menu for our “A Christmas to Remember Farm-to-Table Dinner” using our sustainably grown and raised meats and vegetables to produce fresh, healthy and delicious dishes to please a wide variety of tastes and diets. All of our dishes are gluten free and produced in our commercial kitchen that is also gluten free. We cook using a minimum amount of oil (and only extra virgin olive oil). We are also careful with our use of sugar and salt.
Our Menu for Christmas Dinner:
~ Sustainably raised on pasture, smoked turkeys, using our professional commercial smoker and our special technique on how we cook them. Cooking a turkey in the traditional way often leads to either overcooked or under-cooked white or dark meat. Our cooking method gets both white and dark meat perfectly cooked, juicy and delicious.
~ Sustainably raised on pasture, smoked pork, using our professional commercial smoker, and served with a tamarind-pineapple sauce.
All of our other dishes are strictly vegetarian, including the dressing and the gravy.
~ Our own special dressing recipe made with our farm fresh herbs and gluten free bread.
~ Deliciously fluffy Sweet Potato Cake
~ Special Ecuadoran Golden Rice Dish
~ Smooth and Creamy Mashed Potatoes with Vegetarian Gravy
~ Corn Pudding Casserole, A favorite at our Thanksgiving Dinner
