Real Stories from the Hogar: Bringing life back to those on the brink

9 months ago, a young man was brought to us from a hospital on the coast. 22-years old, an orphan with no family whatsoever. He was experiencing multiple, serious health complications due to his recent diagnosis, and the hospital that referred him to us expected him to die. They did not know what else to do with him. So young Diego arrived at Hogar de Esperanza with a T-cell count of 5. His immune system was shot, and he should have already been dead. He was burning up with a high fever, was bone thin and unable to eat or walk. His chances of surviving were indeed slim.

Diego passed by the foundation a few days ago for a visit and to pick up his HIV medications. He now appeared a normal young man, smiling and the picture of health, telling us all about his new job. My mind quickly flashed back to the 6 months we had spent with him at the foundation, the first weeks being touch and go. I remember waking up those first nights to go check if he was still breathing, and expecting the worst. How, in addition to his health problems, dealing with his stubbornness and emotional issues were just as challenging. How he had been so angry about his HIV status, refusing to accept it, and wanting to just escape from it all. How we were persistent with getting him medical care and insisting that he take his medications. The countless pep talks we had with him to keep him on the right track. His T-cells are now at a healthier count of 200, and his viral load is undetectable. Diego is truly a miracle – one of our favorite examples of how, with your support, we have helped bring life back to those on the brink of death.

Adventurers wanted for Parque Cotopaxi trip

I am in the planning stage of a trip for next weekend’s lockdown (May 13-17). Tambopaxi Lodge in Cotopaxi is open for business although the park itself is closed.

This is a unique opportunity to have the park to ourselves (with limited other visitors). This lodge is wholly inside the park, so unlimited outdoor activities are available (hiking and horseback riding).

The lodge is the staging grounds for acclimatization for the Cotopaxi climb, so is at 12,000+ elevation Those with heart/breathing issues probably wouldn’t want to venture here.

There is a lodge with dorm sleeping and more private residences available.

Fredy showed up a few minutes before his appointed time with his cleaning equipment and his helper. They were both very courteous and moved the items to our terrace to avoid any mess in our apartment. After the items were cleaned, the sofa was moved back into the apartment and they left a large fan in the room to help the furniture dry quickly. Recommendation for Bodhi’s smoked brisket (pastrami), food delivery

I just tried Bodhi’s hickory and apple wood smoked pastrami and it was fantastic. i got the pound thin sliced, and it was lean and tasty; no fat wastage in the whole pound. I made sandwiches with the sourdough and sauerkraut from Tienda Nectar. I got 4 whopping sandwiches with some trimmings I nibbled on while toasting the bread. I’m thinking of trying the pork but will probably just get the pastrami again.

A few weeks ago a friend kindly brought me some truffles from the US, so this week we will be offering you a touch of luxury at Le Petit Jardin. 

As an appetizer, I will be making scrambled eggs with black truffle and Serrano ham, served in a vol-au-vent. I will also be offering a foie gras torchon with quince conserve, and a duck magret salad.

Double D’s Menu for the week of May 10

This menu brings you four brand new recipes. Both mains feature wide pasta tubes filled with either chicken and spinach or spinach and mushrooms and baked in a creamy white sauce. For those of you who loved our Tiramisu trifles from the bygone, safe fair days, we’re combining those with our ooey, gooey brownies. If chocolate isn’t for you, the other sweet is two thin buttery cookies filled with strawberry jam. As a reminder, both mains are fully cooked and ready for you to enjoy right away or to freeze and eat at a later time.

Working towards a better food industry

At last someone has written a book on how our (USA) food industry makes people sick.
Here is a quote: Dr. Robert Lustig, a pediatric endocrinologist and Professor Emeritus at the University of California, San Francisco, has written a number of excellent books about health. His latest, “Metabolical: The Lure and the Lies of Processed Food, Nutrition, and Modern Medicine” goes deep into the details of how changes in our food supply have damaged our metabolic health. (The created term “metabolical” is actually a portmanteau of the words “metabolic” and “diabolical.”)

“I wrote it because nothing else has worked,” Lustig says. “Part of the problem is this is such a complicated issue. There are too many stakeholders and you have to find a method for making everyone happy. Until you do, you can’t solve it.

There is a way to actually solve this, [but] every stakeholder, whether it be the patient, the doctor, the food company, the insurance industry, the medical profession, Wall Street and Congress … has to understand the same thing. They all have to be working off the same set of facts. You see what happens when you don’t work off the same set of facts.

So, my job was to put all of this in one volume so that everyone had access to the same information, and then we can go from there. I lay out in the book what the argument for fixing the entire food system is, and how everyone can benefit from it, even the food industry.”

Mediterranean Meat Loaf
½ teaspoon vegetable oil
2 slices dry bread, diced
½ teaspoon vegetable oil, or as needed
¼ cup milk
1 pound ground King Smokehouse Lamb
1 egg
4 cloves minced garlic
2 tablespoons chopped fresh thyme
1 tablespoon Salsa Ingles
1 tablespoon lemon or lime zest
1 teaspoon each: ground coriander, basil, rosemary, and basil
¾ teaspoon salt
¼ teaspoon ground black pepper
¼ cup tomato sauce or catsup
5 leaves fresh mint, finely chopped (no mint use thyme +/- 1 teaspoon
2 tablespoons balsamic vinegar

Directions:

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9×5-inch loaf pan with oil. Place bread and milk in a small bowl. Press bread with a fork to soak up the milk. Combine lamb, egg, garlic, thyme, Worcestershire sauce, lemon zest, coriander, basil, rosemary, salt, and pepper in a medium bowl. Add soaked bread; discard the leftover milk. Mix with hands until well combined. Transfer meatloaf to the prepared pan. Combine tomato sauce and mint; spread evenly over the meatloaf. Drizzle with balsamic vinegar. Bake in the preheated oven until no longer pink in the center, about 35 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove and let cool for 5 minutes before serving. Sandy hint: Line pan with foil and you can remove the meatloaf easily. Serve with roasted potatoes and carrots. Disfrute.
