My problem is my 6-month time restriction has run out, due to Covid (I started the process in Guayaquil in July of 2019 and have, just now, gotten the final cedula appointment for April 26th, 2021) and misinformation concerning my allowable time frame.

Any suggestions getting this accomplished? I have 11 – 12 square meters. (Basically half of a 20′ container) I will pay and share space in the container of someone shipping who is current with their time allowance to bring in their belongings. Thank you,

Vaccination for flu and covid 1 month apart

Today I went to the Ministry of Public Health (MSP) for my flu shot. I was told that vaccination for the flu and Covid had to be one month apart. Since I am of Tercera Edad, and with Covid vaccination for this group around the corner (presumably) I was advised not to take the flu shot for now.

Animal neglect

I have a neighbor who neglects her dogs and cats. She had a dog with a litter and promised to spay her after lactation but she didn’t. Now she has another litter plus one left over from the first litter. She has two cats and a litter of kittens. The puppies cry all night and my neighbor doesn’t do anything until I call her out. She leaves for the night and the animals have no water and the puppies scream all night. The two adult dogs plus the new puppies live in one doghouse and my neighbor has an umbrella on top of the dog house as shelter for the cats. The puppies are always crying and screaming and the mother dog is stupid and doesn’t care for them. I am ready to sell my house and move. Ecuadorians live and let live but I can’t take hearing the distress anymore. Suggestions other than selling my house and moving?

Many thanks to those who have come forward to assist my friend. She still needs more jobs to help her cope.

My friend is looking for work from 2 to 6 PM. She is a 42-year-old teacher with two teenagers who is currently earning a measly $200 a month. Her husband suffered from leukemia for a long time and has now died. She has to pay medical bills for him and is struggling just to make ends meet on that salary. Her children are in school and she works in the morning but needs a job in the afternoon to provide enough income for the family to eat properly and have the bare essentials, and to help pay the bills. She doesn’t speak English but is able to use Google Translate. She can tutor, cook, clean, and do gardening or other tasks around the home or office.

On-line learning is a real challenge for youngsters and if they are English speaking with classes in Spanish, it can be even worse. Why not ask a real, live teacher to come to your home to tutor them? She has her own children, so knows how to reach a child. If you can’t employ her for a whole week, even an afternoon or two would help and hopefully someone else could employ her the other afternoons.

The Good Friday-Easter weekend is coming quickly. April 1 is a special celebration regarding Jesus’ institution of the Lord’s Supper and pilgrimages are made between several of the churches in the Old Town. If you want to participate and need a driver, let me know. April 2 is Good Friday – a national holiday in Ecuador. (Banks will be closed, along with many businesses). April 3 is Holy Saturday when the city prepares for the celebration of the Resurrection of Jesus Christ on Easter Sunday. Special services may be held around town throughout this weekend.

It’s always good to plan ahead if you want to rent a car from Cuenca Car Share. Sometimes all of our cars have been spoken for. Please don’t hesitate to contact me in advance to rent your vehicle.

If you want to travel but can’t, because you don’t have a car, call me. We’ll have a late model car available for your travel date, if you reserve ahead of time. Simply the Best Shepherd’s Pie!

For lamb filling

1 tbsp. extra-virgin olive oil

1 large onion, chopped

2 carrots, peeled and chopped

2 cloves garlic, minced

1 tsp. fresh thyme (or ½ tsp. dried)

1 1/2 lb. ground King Smokehouse Lamb

1 c. frozen peas

1 c. frozen corn

2 tbsp. all-purpose flour

2/3 c. chicken broth (or use 1 bouillon cube dissolved in water.)

1 tbsp. freshly chopped parsley, for garnish


Preheat oven to 400° (Works fine in toaster oven or air fryer). Make your mashed potatoes using plenty of butter and cream or milk, they need to be spreadable (or use instant using directions on box). Great way to use left over mash. Set your potatoes aside and make the filling. Make lamb mixture: In a large, ovenproof skillet over medium heat, heat oil. Add onion, carrots, garlic, and thyme and cook until fragrant and softened, 5 minutes. Add ground beef and cook until no longer pink, 5 minutes more. Drain fat. Stir in frozen peas and corn and cook until warmed through, 3 minutes more. Season with salt and pepper. Sprinkle meat with flour and stir to evenly distribute. Cook 1 minute more and add chicken broth. Bring to a simmer and let mixture thicken slightly, 5 minutes. If you use an oven proof pan then proceed to toping. Or pour into an oven pan. Top lamb mixture with an even layer of mashed potatoes and bake until there is very little liquid visible and mashed potatoes are golden, about 20 minutes. Broil if desired. NOTE: If you want to use frozen mixed vegetables omit the fresh carrots. Garnish with parsley before serving. Another hint: If this is too much make smaller pies and freeze, they do great.
