An attitude of gratitude to members of the Cuenca expat community

In response to an opinion piece published elsewhere on March 7, shaming expats over 65 who request IVA refunds (which might be deleted before this is published), I feel compelled to post a different, more positive perspective here:

–Thank you for maintaining sufficient healthcare coverage even after you received your permanent residency visa and you no longer have to prove to the government that you or your family and friends can cover the cost of any medical calamity.

–Thank you for having sufficient income above the $400/mo minimum, which is the poverty wage of Ecuador. If you cannot sustain your chosen lifestyle as an expat, you make a change privately.

–Thank you for the respect you show the expat community by assuming they are adults who have found their own ways to donate, whether it be to a recognized charity or one individual, without being hounded during this worldwide, soul-crushing time with pleas to support those whom you deem worthy or be told how you should be charitable with your stimulus checks.

–Thank you for living the belief that being an expat is a privilege. Fitting in as a good neighbor by accepting what may be irksome to us reflects on us all.

I cat sat for a friend and learned that the cat was badly abused by my friend’s other cat. Jesse is a spayed, calico cat who is very affectionate, and was love-starved when she came to me. She is just a sweet, loving cat, but I didn’t realize that I was very allergic to her, until I became bronchospastic and had difficulty breathing. Jesse is shy when first meeting people and is a master at hiding, but will come out when she feels safe. It took her only one day to cozy up to me, and a good week to come out when others were around. She would make a purrrrrrfect pet for a single person, but probably would not do well with children.

Nearly one year of Covid response – and we carry on with your help

We’ve been on a roll. It’s coming up on one year now where we’ve been providing an array of unique services to those most affected by the impacts of Covid here in Ecuador. In our trip to the jungle, we combine visits to the Andes and Jungle. Mr. Wash provides laundry and dry-cleaning pickup and delivery service in Cuenca. Fabian has been our pandemic lifeline and became our trusted friend. We have used Mr. Wash for well over a year without one single problem. Alas the new washer and dryer are here and hooked up so back to the harsh reality of household chores for us.

There were no lost articles, no damage, nothing ever came back less than perfectly laundered. In fact he operated as an essential service during the initial 90 day lock down. Lucky for us he never missed a beat, even when license plate rules or curfew hours made it difficult. He was always on time and always conducted his business to the highest Industry standards.

Our laundry was picked up and delivered the same day; dry cleaning is a two-day service. Everything is professionally laundered, dried and perfectly folded. Dry cleaning was always exactly right, as I said there was never one problem. In addition to running his business in a highly professional manner Fabian is a very caring person and always checked in on us. We cannot speak too highly about how he conducts his business.

Eating out in Cuenca used to be our daily routine. Now it is home cooking and ordering in. And nothing has made it easier on us when we need a break from cooking than finding several consistently excellent restaurants. Our friends at Pig and Cow are just that… A consistently excellent BBQ, smoked meat, sandwich restaurant.

They do it like you wish you could. But for us spending 12 hours babying just the right cuts of hand selected meat as it slow roasts and smokes, is just not in the cards. We’ve never been disappointed not once! The meat, the seasoning, the bread, the packaging, the sauces, every little detail is handled perfectly and we always come away happy.

Our ‘Go To’ sandwiches are the Pulled Pork and the Hot Pastrami but we’ve had the ribs, roast turkey, sliced ham, hamburger, cookies and cold slaw, all are very good. The succulent, flavorful, mouth-watering pulled pork with just the right balance of sweet sauce on the tender meat and that bread, well that’s just been hard to break from.

The Pastrami Sandwich is just gorgeous, packed with layer upon layer of thin sliced meat piled high on fresh rye bread, it hits all the flavor notes and never ever disappoints.

We are happy to highly recommend Pig and Cow to anyone needing some great comfort food.
