Hello Cuenca friends and friends of Paws with Hope. We are extremely thankful for all who are involved in keeping our rescue animals fed, sheltered, and vetted. Unfortunately, we found out a few days ago that the owner of the house we recently rented has sold the house. Now we have no option but to relocate again.

Currently we are home to 8 dogs: Ginger Bailey, Nila, Max, Scott, Gloria, Tala, and Peanut and 3 cats: Jake, Cleopatra, and Silas. We also have a dog who we call Oscar who comes here to eat and sleep. Finding a new rental and moving the animals again will not be easy and will not be low cost. So we have no choice but to ask for help from the community and our supporters.

Nearly one year of Covid response – and we carry on with your help

We’ve been on a roll. It’s coming up on one year now where we’ve been providing an array of unique services to those most affected by the impacts of Covid here in Ecuador. This crisis has exhausted everyone, everywhere, including the many organizations who have been helping. Many have had to scale back or even stop their means of assistance.

However, here at Hogar de Esperanza (Home of Hope), we carry on with new energy. We have recently increased our medical, nutritional and psychological support to those most vulnerable, as we continue to see their daily situations worsen. Covid has affected so many, and for those who were already sick and poor – those already living on the edge – they have felt the brunt of it.

In order to continue our level of support to those in greatest need, we need to raise at least $5,000 during the month of February. With the British variant circulating, what is the ideal mask to avoid the spread of covid-19?

The arrival of the British variation of covid-19 in Ecuador has concerned both medical personnel in the country and the general public.

For this reason, it is necessary – now more than ever – to maintain the practices that during 2020 prevented thousands of infections: the use of a mask, constant hand washing and the respective biosecurity and social distancing protocols.

In August 2020, Duke University researchers developed a simple and inexpensive optical device that allows measuring the ability of a mask to block respiratory droplets that infect COVID-19, by making them visible using laser light and counting them using a computer algorithm. .

During the trials of this new device, it was confirmed that when people speak, they expel droplets, so that the coronavirus disease can be transmitted by talking, without coughing or sneezing, according to physician Eric Westman and physicist and chemist Martin Fischer, co-authors of this research.

Double D’s: What, exactly is Crispy Louisiana Chicken Pasta?

We’ve received lots of requests for further description on the Crispy Louisiana Chicken Pasta. Here goes:

In addition to the crispy chicken and pasta, you’ll be treated to Parmesan cheese, mushrooms, peppers and onions in a spicy Cajun cream sauce. On a scale of 1 (wimpiest) to 10 (burn your face off), we expect the spiciness to be a 4-5. If you find it to be too spicy, stir in a dollop of plain yogurt or sour cream or cream cheese. It’ll make it less zesty.

Nacho average cheese

On this edition of what’s cooking at King Smokehouse – Cheddar Cheese. Yes, creamy, melty cheddar cheese (sliced or block). The talented folks at King Smokehouse are sharing what they are making this week in the King Smokehouse “kitchen”. Nachos! Yes, creamy cheddar cheese sauce over crispy corn chips. Or use the sauce for the finest mac ‘n cheese (topped with King Smokehouse bacon of course). Or make loaded nachos with all the fixins: Jalapeno peppers, tomatoes, bacon, whatever suits your palate.

Here is our recipe:

Nacho Average Cheese Sauce

2 tablespoons salted butter
2 tablespoons all-purpose flour
1 cup milk
8 ounces King Smokehouse Cheddar Cheese
1/8 teaspoon cayenne pepper


Melt butter in a saucepan over medium-high heat.
Whisk in flour and cayenne pepper and cook 1 to 2 minutes.
Whisk in milk and bring to a simmer.
Reduce the heat to low and add in cheese. Stir until cheese is melted. Add a dash of hot sauce if desired. Alternately, seed and chop a Jalapeno pepper and add at the end for zingy Nachos. Serve over your favorite chips. Disfrute!
